Introduction

This is my mom's recipe that I changed to suit a vegetarian daughter and a dieting mom!. This recipe involves spreading dough in pans...so it takes a bit of work! ....but my mom always believed in hard work and the result is delicious! Ingredients

    1 package of yeast (rapid rise)
    4 tbls water (lukewarm)
    1.5 tsp sugar
    .5 tsp salt (optional)
    .5 cup oil
    2 cups warm water
    6 cups flour
    2 red ripe tomatoes
    .5 to 1 cup green pepper
    .5 to 1 cup onions
    3 large cloves or 3 tbls of garlic diced
    .5 cup Parmesan Cheese (( I prefer peppercorn romano)
    oregano (to taste)
    red pepper (to taste)


Directions

Serving size - one slice
Makes 24 slices.
In mixer, soften yeast in warm water. Mix sugar, salt, and oil with the softened yeast mixture. Add 2 cups of water. Beat in 3 cups of flour. Gradually work in the rest of the flour using the dough hook attachment. Let rise until double in bulk (about 2 hourswith rapid rise yeast). If you are going to work, I've let it sit all day (regular yeast) with great results. Spread out dough on two large greased pizza pans. Add toppings in this order: tomatoes sliced round and thin, green peppers (sliced thin), onions (sliced thin), garlic, oregano, parmesan cheese. Preheat oven to 400 degrees. Bake on second rack from bottom for 10 minutes or until bottom is brown. Move to top rack for 10 minutes. Remove and enjoy!
