Not your average salad and nothing like the dreaded Iceberg Lettuce (house) salad that passes for nutrition in most American Restaurants. Kick up dinner with some pepperoni, ham and black olives in this dark green salad that sings with flavor.Also good with some spinach mixed in. Mix and match your veggies, but variety of crunchy crispy ingredients like pepper, cucumber, carrots and celery are key to the lively texture. Ingredients

red leaf lettuce 1 head
Red Ripe Tomatoes, 4 large whole (3" dia)
Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
Celery, raw, 1 stalk, large (11"-12" long)
Green Peppers (bell peppers), 0.5 cup, chopped
Black Olives, 10 jumbo
Pepperoni, 15 slice
Food Lion thin deli slice cooked ham, two ounces of half a package of deli meat
Cucumber (with peel), 1 cucumber
Directions
Chop carrots, celery, green peppers, black olives, cucumbers, Pepperoni and deli ham. Mix together.
Rinse lettuce leafs individually and shake off water or blot dry with paper towels. Shred into bit size pieces into giant bowl.
Chop tomatoes and mix everything together.
I prefer this sassy salad with just some salt and freshly ground pepper.
