Chicken Taco Soup

Ingredients

    48oz chicken broth, 8oz water, 320g boiled chicken thigh, 120 boiled chicken breast, 31oz can Old El Paso Refried Beans, 2 10oz cans Rotel tomatoes with chilies, 2 16oz bags frozen green beans, 16oz bag frozen corn, 1.5oz packet Taco Seasoning, 8oz 2% Nice'n Cheesy

Directions

Put all the chicken broth and water into a large stockpot over medium heat. Once the broth is warm, stir in the refried beans. Next add the chicken, Rotel, and taco seasoning. Stir well. Add the frozen vegetables to the mixture and cook until the green beans are tender. Cut the nice'n cheesy into .5oz cubes and stir them into the soup a couple at a time. Make sure each batch is completely melted befor adding more. Salt and Pepper to taste. Bring the Soup to another boil, cover, and turn off the heat. Remove the pot from the hot eye and let it cool to room temperature. Enjoy. This makes 16 one cup servings. Each cup has 1 serving of veggies. The soup is delicious by itself or can be enjoyed over rice.
