Cheesy Vegetable Rice Soup

Introduction

Number of Servings: 16

Ingredients

    2 bags of frozen California Blend Vegetables, 1 bag of frozen green beans, 2 32-oz cartons of chicken broth, 2 cans of Rotel tomatoes with chillies, and 1 16-oz block of 2% velveeta cheese, 4 cups cooked white rice

Directions

Pour all the chicken broth into a large stockpot. Add the frozen veggies and boil until the veggies are tender (about 25 minutes). Next stir in the two cans of Rotel Tomatoes. Cut the cheese into small squares. Add a few at a time to the soup stirring frequently until they have melted. Finish adding all the cheese in this method. Last stir in 4 cups of fully cooked white rice that has been rinsed to remove most of the starch. This recipie makes 16 one cup servings and will count for one vegetable.
