Introduction

To be used in Eggs Benedict
To make the dish even more low fat, use Yves non-meat canadian bacon to replace meat.

Number of Servings: 3

Ingredients

    3/4 cup of Fage greek yogurt
    4 T butter
    juice from a fresh lemon
    3 egg yolks

Directions

Separate 3 eggs
Save whites for another recipe
Combine yolks, juice yogurt and butter in heavy saucepan (or double boiler)
Over low flame, whisk constantly until combined and thickened.
Serve over eggs benedict

    Do you know if we could substitute Eggbeaters for the eggs? This looks so do-able!!! - 8/2/09

    Try it and see...It might not have the characteristic yellow of hollandaise.
