Breakfast cookie

Number of Servings: 20

Ingredients

    2 1/2 c rolled oats
    3 1/2 c wheat flour
    1 3/4 c applesauce
    1 1/2 c brown sugar
    2 eggs
    1 egg white
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp salt
    2 tsp. cinnamon
    1 1/2 tsp. vanilla
    3/4 c. raisins
    1/2 c. dried cranberries

Directions

Preheat oven to 350. Mix all dry ingredients together. Make a well in center and pour in eggs, applesauce, and vanilla. Mix well. Add fruit and stir until well blended. If batter is too dry, add a few splashes of water. Drop by rounded tablespoon onto cookie sheet lined with parchment paper. Use wet hand to pat cookies down (cookies won't spread much on their own.) Cookies will not get crisp. Underbake them a bit to get a moist, chewy breakfast cookie. Store in between layers of parchment in an airtight container.
