Ingredients

Arugula, 2 cups, packed
Walnuts, .5 cup
Garlic, 3 cloves
Olive Oil, .5 cup
Parmesan Cheese, grated, .5 cup
Directions
Clean arugula. I take the stems off, but have also read that it's not necessary, so it's up to you.
If you don't like a strong garlic taste you may roast the unpeeled cloves by placing them in a hot, dry skillet and cooking them until they have a few brown spots on them; let them cool a bit, then peel. In same pan, lightly toast the walnuts.
Combine arugula, walnuts and garlic in food processor; drizzle oil in slowly while processing. Remove mix and add parmesan.
Can be served over pasta, with crackers, as a spread for sandwiches or pizza. Enjoy...in moderation!
