Meatless Spaghetti

Introduction

Number of Servings: 8

Ingredients

    1 tsp canola oil
    1 can diced tomatoes (411g)
    1 can tomato sauce (425g)
    1 can pinto beans (439g)
    1 small stalk celery
    1 onion, chopped
    3 cloves garlic, chopped
    1 bell pepper, chopped (your favorite)
    1 tbsp dried parsley
    1/2 tsp dried thyme leaves
    1/2 tsp dried oregano leaves
    1/4 tsp dried basil leaves
    dash ground cayenne pepper (optional)

Directions

Makes 8 1/2-cup servings.
Blend up the pinto beans and celery (to effectively hide them from your children. You can blend up the peppers too if you wish.)
Saute the onions and garlic in 1 teaspoon canola oil. Add the diced tomatoes, tomato sauce, and bean mixture, and pepper, if not blended.
Heat through. Add thyme, oregano, basil, parsley, and cayenne pepper (opt). Heat and serve over your favorite pasta.
