Cajun Pork Chops

Introduction

This pork chop dish is wonderful with the spicy beans eaten over rice and pork chop. My family loves it! This pork chop dish is wonderful with the spicy beans eaten over rice and pork chop. My family loves it!
Number of Servings: 8

Ingredients

    2 TSP Cajun seasoning (any brand)
    8 Boneless pork chops with fat cut off
    1 TBSP Olive oil
    1 Red Onion
    1 Bell Pepper (can use Red instead)
    1 Can Black Beans, drained
    1 8oz Can Corn
    2 TBSP BBQ sauce
    2 Cups brown rice (Quick Cook)

Directions

Sprinkle one teaspoon Cajun spice on both sides of pork chops. Heat oil in nonstick skillet over medium heat. Add chops and cook for 3 minutes. Turn over. Add onion and pepper around meat; cover and cook 7 minutes or until pork is almost cooked in center.

Stir in remaining one teaspoon Cajun seasoning; cooke one minute. Add black beans, corn and BBQ sauce; simmer 2-3 minutes or until heated through. Sever with quick-cook brown rice.
