Introduction

A refreshing and not-too-sweet desert that is perfect for a hot summer evening. And it is a great use for all those limes that are falling off your tree - if you're fortunate enough to have that problem! Perfect paired with honeydew melon. And it is a great use for all those limes that are falling off your tree - if you're fortunate enough to have that problem! Perfect paired with honeydew melon.
Number of Servings: 8

Ingredients

    Lime juice, 1 cup
    Simple syrup, 1 cup (boil, 1 cup each sugar and water to dissolve, then allow to cool)
    Water, 1 cup
    Egg white, 1, OPTIONAL (adds volume/texture when frozen)
    Basil, 10+ leaves, chopped fine

Directions

Make simple syrup by dissolving 1 cup sugar in 1 cup water, allow to cool.
Stir together lime juice, simple syrup and 1 cup water, add egg white (if desired) and basil.
Freeze using an ice cream freezer, per machine instructions. (Note: If you don't have an ice cream maker, you can freeze in a plastic container and blend in a food processor)
Once 'sorbet', you can freeze in a container for later. To 'refresh', scrape with a fork, like granache.
