Ingredients

    4 CUPS YELLOW SQUASH
    4 CUPS ZUCCHINI(COULD USE JUST ONE KIND)
    1/2 CHOPPED ONION
    I GREEN PEPPER MED.
    14.5 OZ DICED TOMATOESI USED CANNED COULD USE FRESH
    CLOVE OF GARLIC.
    3 TBSP OIL. (I USED EXTRA VIRGIN OLIVE)
    SALT & PEPPER TO TASTE.
    1/2 CUP OF GRATED PARMESIN CHEESE

Directions

CUT SQUASH IN THIN SLICES . HEAT OIL IN PAN THAT HAS TIGHT FITTING LID. ADD SQUASH TO PAN ALSO CHOPPED ONION AND GREEN PEPPER. PUT LID ON AND COOK OVER MED HEAT UNTIL VEGGIES TENDER. ADD !/4 CUP OF PARMESIN CHEESE. ADD SALT AND PEPPER TO TASTE. ADD GARLIC I ADDED DASH OF ITALIAN SEASONING (OPITINAL)MIX. ADD TOMATOES. MIX PUT IN CASSEROLE DISH. SPRINKLE ON TOP 1/4 CUP PARMESIN CHEESE. BAKE 350 OVEN 20-30 MIN UNTIL SLIGHTLY BROWN ON TOP. SERVE WITH XTRA CHEESE IF WANTED. . MAKES 6 ONE CUP SERVINGS ENJOY.
