Fat Free All Bran Blueberry Muffins

Introduction

This simple, fat-free blueberry muffin is delicious and an easy way to get some fiber. These are not very sweet, so you can decide if you care to increase the sugar. You can use fresh or frozen unsweetened blueberries.

Because of the moisture from the blueberries, they have a short shelf life. Refrigerate or freeze to keep longer.

Ingredients

    2 Cups All Bran Cereal
    1 1/4 Cups Skim Milk
    1/3 Brown Sugar
    1/2 Apple Sauce
    1 tsp vanilla Extract
    2 Egg Whites


    1 Cup Flour
    1 1/2 tsp Baking Soda
    1 1/2 tsp Baking Powder
    1/2 Cinnamon Powder


    1 C Fresh or Frozen Unthawed, Unsweetened Blueberries

Directions

Preheat Oven to 400. Grease muffin tin.

Mix cereal, milk, apple sauce, sugar, and egg together. Let sit for 10 minutes.

Mix dry ingredients together. Stir into wet mixture until just mixed. Stir in blueberries.

Pour into muffin tin. Bake for 12 to 16 minutes.
