Introduction

Yummy zucchini casserole. I'm trying to figure out how to reduce the calories and sodium some more - any suggestions are helpful! This recipe is calculated using regular Stove Top stuffing miz..I bet there are more out there that are less fattening! Yummy zucchini casserole. Ingredients

    2 pounds sliced zucchini
    1/4 cup chopped onion
    1 can 98% FF cream of chicken soup
    1 cup fat free sour cream
    1 cup grated carrot
    1/2 cup I can't Believe It's Not Butter light, melted
    6 oz dry stuffing mix

Directions

preheat oven to 350
boil zucchini and onion in water 5 minutes and drain
combine soup, sour cream, and carrots on a bowl. stir in zucchini and onion.
In a separate bowl, combine butter and stuffing. Spread half of the mixture in the bottom of a 13x9 baking dish. Spoon zucchini mixture over the stuffing, then cover with remaining stuffing.
Bake 25 minutes until stuffing is golden brown.
