Salsa chicken

Introduction

This was a "I need food STAT" recipe that I came up with one night after a long day in the office. This was a "I need food STAT" recipe that I came up with one night after a long day in the office.
Number of Servings: 8

Ingredients

    8 boneless skinless chicken breasts
    8 oz Cabot's 50% Reduced Fat Cheddar Cheese (or any block of reduced fat cheese), shredded
    1 can black beans, rinsed well
    1 jar salsa, whatever you have on hand
    4 cups Romaine Lettuce, shredded

Directions

In a large skillet, cook the chicken breasts, 10 minutes on each side or until cooked through.

In a small pan, add the salsa and the beans. Simmer over low heat until warm.

Once the chicken is done, plate chicken while still warm, add the cheese, salsa mixture and 1/2 cup of the lettuce on the side and enjoy.

This can be made ahead of time, portioned and stored in the refrigerator for up to a week.
