Marinated Lime Mint Chicken K-bobs

Introduction

Fabulous QUICK way(as compared to most marinades) to have flavorful chicken that is also tender and juicy! Fabulous QUICK way(as compared to most marinades) to have flavorful chicken that is also tender and juicy!
Number of Servings: 20

Ingredients

    half cup plain yogurt
    2 Tbls spicy brown mustard
    3 Tbls fresh lime juice(2-3 limes)
    zest from the limes
    3 Tbls olive oil(garlic flavored if you can find it)
    1/4 to 1/3 cup tightly packed fresh mint, chopped
    2 teas granulated regular sugar(don't sub artificial sweetener)
    3-4 Tbls crushed garlic(5 BIG cloves)
    2 teas greek seasoning( I use Cavender's)
    1 teas salt
    2 Tbls water

    Boneless and skinless chicken breasts or tenders. 6oz per person( up to 6 people(36oz chicken) with this amount of marinade)

Directions

First off...you are only getting about one twentieth pf the recipe from the marinade- that's why I put that it made 20 servings- it would not be accurate to say that you were actually consuming 25% of the marinade as you throw it out. To get an accurate calorie count- take the calories from the chicken and add the 25-30 or so calories from the marinade- that should be close.

Mix all the ingredients in a gallon size zip lock bag. squeeze and shake until will mixed.

if using tenders just put in the bag and marinate at least 45 minutes but no more than 90 minutes)

if using chicken breasts- cut into 1.5 to 2 inch chunks (try to get a uniform soze so it will all cook evenly) and put in bag t marinate.

When ready to cook- thread onto skewers(toss marinade) and grill over high to med high heat until char marks appear and juice runs clear. (chicken should feel firm to touch) usually about 3-4 minutes per side- depending how tightly you packed meat onto skewer.

I serve this will grilled tomatos, mushrooms, onions and squash. Tip- don't mix veggies on skewers...onions take a long time to cook and should be put on about 10 minutes before other veggies(which only take 2 minutes per side)
