Lower Fat Zucchini Bread

This zucchini bread is made with part applesauce for the shortening to make it lower fat. To make it even healthier, try any or all of these substitutions: use 1/2 whole wheat flour, use 1/2 cup molasses in place of 1/2 cup of the brown sugar. This gives it a very hearty, rich taste if you like the taste of molasses. Of course, you can also use egg beater instead of whole egg. This recipe is altered from my late Grandmother's recipe, and our whole family enjoys this lower fat version. This zucchini bread is made with part applesauce for the shortening to make it lower fat. Ingredients

3 Large Eggs
1/2 C. Vegetable Oil
1/2 C. Applesauce, unsweetened Note: if using sweetened applesauce, you can reduce your sugar accordingly.
1 C. Granulated Sugar
1 C. Brown Sugar
2 tsp. vanilla flavoring
2 C. Shredded Zucchini
3 C. Flour
3/4 tsp Salt
2 tsp. Ground Cinnamon
1 tsp. Baking Soda
1/4 tsp. Baking Powder
Chopped Nuts (optional and not included in nutrition)
Raisins (optional and not included in nutrition)
Directions
In small bowl, mix dry ingredients.
Blend together eggs, oil, sugar and vanilla until well blended. Add zucchini. Add dry ingredients and blend.
Put in two well greased 9"x5"x3" loaf pans. Bake at 350 degrees for 1 hour. Let sit in pan for 10 - 15 minutes. Turn out on rack and cool.
Makes 16 servings (1" slices) Enjoy!
