Endless Mexican Chicken

Endless Mexican Chicken

Introduction

This recipe is not only delicious and quick to make it's your workhorse if you love Mexican food.
Cook this recipe up in large volumes and store in the freezer for quick use when you've a craving for something over-the-border.

Replace this for ordinary chicken and beef in tacos.
Bake into enchiladas
Combine with rice into burritos
Serve over tortilla chips for a healthy version of nachos

The uses are only limited by your imagination.

This took me 10 minutes to imagine up and we'll get a lifetime of dishes out of it.

Number of Servings: 8

Ingredients

    4..... Chicken Quarters bone in, skinned
    2 14.5 oz cans.....southwest diced tomatoes
    1 15 oz can......... of black beans
    1 cup... frozen or fresh kernal corn
    3/4 cup... green bell pepper, diced 1/4 inch
    1 cup...... diced raw onion
    1/4 cup.... tomato paste
    2 clove garlic diced or minced
    1 pack Neuva Concine Taco Seasoning (found at Target.. any other brand will do)
    1 1/2 cups....water

Directions

Skin chicken and place in pot.
Drain and rinse black beans.
Add all other ingredients and 1 cup of water to pot, leaving tomato paste to the side until later.

Simmer on stove for 30 mins or until chicken is cooked and tender.
NOTE: This can be placed into a crock-pot to stew all day

Reduce heat to low.
Using cooking fork and large serving fork, remove breast from pot one at a time and pull meat from bone.

Leave meat aside for the moment

Add water and tomato paste as needed to pot until desired thickness.

Return chicken meat to pot, stir until fully incorporated and heated.

Makes 8 1 cup servings.
