Introduction

I love it chunky rather than blended smooth. Good for any time of the day. I love it chunky rather than blended smooth. Good for any time of the day.
Number of Servings: 8

Ingredients

    I large cucumber, peeled and chopped
    2 tomatoes, chopped
    1 red onion, peeled, chopped
    1 medium green pepper chopped
    1 pimento drained and chopped optional
    2 large cloves garlic chopped
    1/3 cup olive oil *
    1/3 cup red wine vinegar *
    1 46 oz can tomato juice
    1/4 tsp liquid hot pepper
    1 1/2 tsp salt
    1/8 tsp coarsely ground black pepper
    croutons if desired
    chopped chives if desired

    * you can also substitute fat free Italian salad dressing for these. Gives it a zippier taste


Directions

Mix all ingredients except for the croutons and chives in a large bowl. Refrigerate covered 2-6 hours , although it is bested served chilled overnight. Garnish with the croutons and chives if desired.
