Ingredients

    24 oz. container lowfat cottage cheese
    4 roma tomatoes
    1 large cucumber
    1 medium green pepper
    1 bunch green onions
    2 packets Hidden Valley Ranch Salad Dressing Mix

Directions

Dice all vegetables, being sure to de-seed tomatoes and cucumbers if the salad will be stored in the refrigerator for any significant period of time. Fold in medium-sized bowl with full container of cottage cheese and preferred seasonings (mine are the afore-mentioned dressing packets and some coarsely ground black pepper). Eat.

Makes 6 2/3 cup (approx, depending on vegetable volume) servings.
