Delicioso Black Bean & Corn Salad

Introduction

Black beans, corn, red bell peppers, tomatoes, green onions and avocado tossed in a zesty lime olive oil dressing! Black beans, corn, red bell peppers, tomatoes, green onions and avocado tossed in a zesty lime olive oil dressing!
Number of Servings: 6

Ingredients

    1/3 cup fresh lime juice
    1/2 cup olive oil
    1 clove of minced garlic
    1 tsp. salt
    1/8 tsp. cayenne pepper
    1 can of black beans (drained and rinsed)
    1 and 1/2 cups of fresh or frozen corn kernels
    1 large avocado diced up
    1 medium red bell pepper, chopped
    2 tomatoes, chopped
    6 green onions or scallions thinly sliced
    1/2 cup chopped fresh cilantro

Directions

1. Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.

2. In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.

Garnish with fresh cilantro or mix in like I do!

Makes 6 decent size portions.
