Hearty tomato sauce and whole wheat chiocciole

Introduction

This is a good recipe to make when you want a filling pasta meal that is nutritious but low-calorie. It is also a good way to cook those extra veggies you have on hand from the farmer's market. Ingredients

    1 15 oz can tomato sauce
    1 medium yellow onion, diced
    6 stems of kale, leaves removed, chopped
    4 tbs olive oil
    1 cup dried lentils
    1 cup water
    2 tbs fresh mint leaves, chopped
    6 cloves garlic, minced
    1 tbsp salt
    4 tbsp red wine vinegar (or red wine that has gone vinegary)
    8 oz Dried whole wheat chiocciole (means snail in Italian!)

Directions

1. Heat the olive oil in a deep sauce pan.
2. Add onions and kale; sautee until the onions are translucent.
3. Add garlic and sautee for 30 seconds.
4. Add tomato sauce, water, red wine vinegar, lentils, salt, oregano, and mint. Stir.
5. Bring sauce to a simmer, then reduce heat. Stir occasionally.
6. While sauce is simmering, bring 6 cups of water to boil in a separate pot.
7. Add pasta and cook until al dente (a little firm).
8. Drain pasta and set it aside.
9. When lentils are tender but not falling apart, remove the sauce from heat.
10. Pour sauce over pasta, toss, and serve!
