Simple Shrimp Stir-Fry

Introduction

This is a basic stir-fry that I like to make up when I want a quick healthy dinner. If you don't like shrimp you can always substitute chicken, beef or pork and any stir-fry veggies will do. (I normally keep several bags in the freezer!) This is a basic stir-fry that I like to make up when I want a quick healthy dinner. Number of Servings: 4

Ingredients

    14 oz package Shrimp (any size) raw, peeled and deveined
    4 T Kraft Light Asian Toasted Sesame Dressing
    1 T extra virgin olive oil
    2 t minced garlic
    16 oz package stir-fry veggies
    1 cup water chestnuts
    4 T soy sauce
    1 cup long grain white rice (dry)

Directions

Combine shrimp and dressing in a ziptop bag or storage bowl and allow to marinate at least 30 minutes or overnight.

While shrimp is marinating begin preparing rice as per package instructions.

Heat olive oil in large skillet or wok and stir-fry garlic for about 30 seconds. Add marinated shrimp (including dressing) and stir-fry until shrimp turns pink (approx. 3 mins). Remove shrimp from pan and add stir-fry veggies and water chestnuts. Stir-fry aprox 5 minutes or until crisp-tender. Add shrimp and soy sauce and stir-fry aprox 1 min or until heated through.

Serve stir-fry mixture over hot cooked rice.

Makes 4 servings: 3/4 cup rice and aprox 1 1/4 cup stir-fry
