Spicy Pasta Primavera

Introduction

This is my version of pasta primavera...I like tomato so I added tomato sauce to this...feel free to omit it, I opted for it instead of using olive oil like traditional recipes call for. Number of Servings: 2

Ingredients

    3 oz matchstick or julienne carrots
    100 grams julienne Zucchini
    100 grams fresh broccoli florets
    2 tbsp chopped onions
    1/2 cup tomato sauce
    2 oz Ronzoni Healthy Harvest linguini whole wheat
    2 strips Jenny-O Turkey Bacon cooked and crumbled
    garlic salt to taste
    crushed red pepper to taste

Directions

This makes two hearty servings.

Cook bacon per package directions, set aside to cool, then crumble.

Cook pasta per package directions and drain.

Spray non stick cooking spray on a medium skillet on medium high heat and add the onions.

Saute lightly then add the remaining veggies. Stir constantly, do not over cook, just cook long enough to sweat the onions and then add the tomato sauce, garlic salt and crushed red pepper, and a little bit of water to thin the sauce just a bit (tablespoon or two).

Let it sauce heat through then toss with linguine and top with crumbled turkey bacon.

Serve immediately.
