Spinach Egg Cups

Ingredients

    4 eggs
    2 egg whites
    1/2 c milk
    1 10-oz box frozen chopped spinach
    3 plum tomatoes chopped
    1 bunch scallions sliced thin
    1 1/2 cup low fat cheddar

Directions

Saute vegetables in olive oil. Spoon into greased muffin tins. Combine eggs milk, salt and pepper. Pour over veggies. Sprinkle cheese on top. Bake at 350 for 20 minutes. May be frozen and reheated in a microwave!
