Introduction

Ingredients

    1 pkg spanish rice mix
    1 14oz can diced tomatoes
    16 oz skinless boneless chicken breasts
    taco seasoning
    1 can red beans drained and rinsed
    1 can yellow corn drained
    1 can red enchillada sauce

Directions

Cook rice according to pkg directions, Mean while cook chicken in taco seasoning. Add all ingredients to rice and cook five more min.. Remove from heat and let stand uncovered.. Great served with corn bread. Makes 6 heaping one cup servings( close to 1 and 1/2 cup servings)
