low carb banana muffins

Ingredients

Almond Flour, 1.5 cup
Honey, .5 cup
Baking Soda, .1/8tsp
Salt, .15 tsp
Banana, fresh, 2 medium (7" to 7-7/8" long)
1/4 c unsweetened applesauce
Directions
combine all ingredients except butter. If the batter is really thick add the melted butter a little bit at a time until the batter is muffin consistency. I have never had to add it,
Line cupcake tins with paper cupcake liners. Spoon the batter into cupcake tins filling about 1/2 full (I use a 1/4 cup measuring cup so it goes faster).
Bake at 375 degrees F (200 C) for about 15 minutes or until the muffins spring back when pressed.

How much butter do you use? I am thinking of trying this. - 2/3/11

sorry abou that. You only need to add the butter if the batter is really thick. Even then just a tablespoon or two should do it- just melt the butter and add it a little bit at a time until the batter is spoonable.
