Oregano Chicken, Revised

Introduction

Ingredients

    2 frozen boneless, skinless chicken breasts
    1 Tbsp lime juice
    1 Chicken bouillon cube, dissolved into 1 cup water
    1 Tbsp Italian Seasoning
    1 tsp Garlic salt
    1/2 medium onion, chopped
    1 tomato, chopped
    2 sweet red bell pepper, sliced
    Butter flavored cooking spray

Directions

Spray non-stick pan with cooking spray. Add chicken and brown over medium heat, about 15 minutes, turning once.

Add onion, half of the chopped tomato, lime juice and dissolved bouillon. Cover and simmer 30 minutes. Add peppers and remaining tomatoes. Cover and simmer another 7-10 minutes, or until chicken is cooked through.

Slick chicken into strips and serve over wild rice.
