JuJu's Potato Salad

Number of Servings: 10

Ingredients

    5 medium potatoes, skinned, chopped, and boiled (should yield five cups).
    1 medium carrot
    1 tsp salt
    1/2 cup light mayonaisse
    1 TBS vinegar
    1 tsp. yellow mustard
    1 medium stalk celery, finely chopped

Directions

Peel, chop, and boil five cups white potatoes (about five average to large potatoes). Do NOT cook the potatoes until they turn mushy. Strain and set aside.

Peel and chop carrot and boil until tender. Drain and mix in with potatoes.

Mix in all remaining ingredients and chill - preferably for one day.

Yields 10, 1/2 cup servings.
