Red Lentil Chilli

This is delicious served over brown rice, or barley. This is spicy, you can cut all the spices in half if you are not used to spicy foods. Serving over rice also seems to cut down on the spice. Ingredients

    2 tablespoons canola oil
    1medium onion, chopped
    4 cloves garlic, minced
    1 green pepper (or any bell pepper), chopped
    1 bag (450g) RED lentils, well rinsed
    2 cups water, you may need more or less
    1 can (796mL, 28oz) crushed tomatoes
    2 teaspoon turmeric, ground
    2 teaspoon cumin, ground
    1-6 DASHES cayenne pepper, to your taste
    1 teaspoon salt
    2 teaspoon sugar
    1 teaspoon ginger, ground, or to your taste

Directions

Serves 10 approx 1 cup each (depends on the amount of water you may add)
In a large saucepan, saute the onion, garlic, and pepper in oil until soft. Add the lentils and enough water to cover them and simmer, adding more water as needed until the lentils are softened, about 8-10 minutes. Don't add too much water. Meanwhile, mix the tomato with the seasonings. When the lentils are softened, add the tomato mixture and reduce heat, simmering about 10 more mins.
