Grandma's Lentil Soup

Introduction

Number of Servings: 20

Ingredients

    2 packages lentils (to cut recipe in 1/2 use 1 pkg)
    16 cups water (when cutting recipe in 1/2 use 12 cups)
    2 celery stalks (same amount in cut recipe), diced
    equal amont of carrots to celery
    5 Tbsp olive oil (when cutting recipe in 1/2 use 3 Tbsp)
    Onion, diced (about 1 cup for full or 1/2 recipe)
    3 clove garlic, minced
    Black pepper to taste
    Pinch of salt

Directions

Soak beans overnight.
Add all ingredients to pot.
Bring to boil on high heat.
Reduce to simmer & cook for 2 hours or till lentils are tender.
Serve in bowl & sprinkle with parmesean cheese (remember to count the points for the cheese).

1 serving = 1 cup of soup

20 servings is a lot but I usually have 2 bowls since it's so low in points. I also like to freeze 1/2 the pot for quick meals when I'm sick or on busy days.
