Manhattan Clam Chowder

Ingredients

    4 bacon slices, diced
    1 cup chopped onion
    1 cup diced carrots
    1 cup diced celery
    1 Tbsp. chopped parsley
    2 15oz cans tomatoes
    2 6.5 oz cans minced clams
    1 1/2 cups water
    2 tsp. salt
    1.4 tsp. black pepper
    1 bay leaf
    1 1/2 tsp. ground thyme leaves
    3 1/2 cups diced pealed potatoes

Directions

In large kettle, saute bacon, until almost cristp. Add onion, cook until tender - about 5 minutes. Add carrots, celery and parsley - cook over low heat 5 minutes, stirring occasionally.

Drain tomatoes; reserve liquit in 1-quart measure. Add tomatoes to kettle.

Drain clams; set clams aside. Add clam liquid to tomato liquid. Add water to make 1 12 quarts liquid. Pour into kettle. Add salt, peppers, bay leaf, and thyme.

Bring to boiling. Reduce heat; cover and simmer 45 minutes. Add potatoes; cover and cook 20 minutes.

Add minced clams; simmer uncovered 15 minutes. Serve hot.

Makes 10 1-cup servings.

To shorten cooking time, eliminate 45 minute simmer time.
