Beef and Veggie egg bake

Ingredients

1 tsp. olive oil
1/4 lb. lean ground beef
1 cup each of diced onions, sliced mushrooms, diced green papper
1 can italian chopped tomatoes
1/2 tsp. each oregano leaves, salt & pepper
1/2 small garlic clove, minced
2 eggs
1/2 cup cheddar cheese, shredded
Directions
In an 8 in. skillet, heat oil and cook ground beef. Drain, add mushrooms, onions, bell pepper, tomatoes and seasonings and garlic and cook. Stir occasionally until veggies are soft, about 5 min. Add eggs and cover. Cook until eggs are done. You can also bake in oven at 400 degrees. Serves 2.
