In an 8 in. skillet, heat oil and cook ground beef. Drain, add mushrooms, onions, bell pepper, tomatoes and seasonings and garlic and cook. Stir occasionally until veggies are soft, about 5 min. Add eggs and cover. Cook until eggs are done. You can also bake in oven at 400 degrees. Serves 2.
