Rhubarb Custard Pie

Introduction

A recipe that my husband's grandmother came up with. It's DH favorite and the only thing that he wants me to use our rhubard for! A recipe that my husband's grandmother came up with. It's DH favorite and the only thing that he wants me to use our rhubard for!
Number of Servings: 6

Ingredients

    3 c. rhubarb, cleaned and chopped
    2 T. 1% milk
    3 T. flour
    1/4 tsp. nutmeg
    2 eggs, beaten
    1 c. sugar
    1/4 tsp salt
    1/4 c. agave nectar

    Crumb Topping:
    1/4 c. butter
    1/2 c. flour
    1/2 c. brown sugar

Directions

In large bowl combine eggs, milk, sugar, flour, salt and nutmeg. Stir in rhubarb and pour into unbaked pie crust.

For crumb topping, combine flour and brown sugar; cut in butter. Evenly sprinkle over filling.

Bake at 450F for 10-15 min; reduce to 350F for 30 min.

Makes one 9-inch pie. Calories have been calculated for 6 servings and does not include the calories for the crust!! (as I said...it's DH favorite and I don't dare cut them any smaller!)
