Introduction

This is super easy and healthy. Eat as a main vegetarian meal over salad greens or as a side with grilled meat. You can add any veggies you'd like to this. To boost the fiber content, use whole wheat couscous (nutrition calculated with regular couscous). This is super easy and healthy. Number of Servings: 8

Ingredients

    Couscous
    Parsley
    Olive oil
    Chickpeas
    Lemon juice
    Green Pepper
    Cherry Tomatoes
    Cucumber

Directions

Cook couscous per package directions. Fluff with a fork.
Drain and rinse chickpeas. Chop vegetables. Add vegetables and chickpeas to couscous. Add lemon juice and olive oil to taste.

Makes 4 generous entree servings or 6-8 side course servings (nutrition information based on 4 entree servings).
