Meat & Bean Chili with homemade seasonings

Introduction

I wanted a chili lower in salt so I used homemade seasonings, home canned tomotoes and no salt kidney beans. The seasonings were more that enough to make a full bodied and flavorful chili. It is cooked low and slow to develop the flavors and like most soups and stews, it tastes even better the next day.

This recipes make 13-14 1-cup servings.

Ingredients

    SEASONING MIX
    1 tablespoon flour
    2 teaspoons chili powder
    1 teaspoon crushed red pepper flakes
    1 1/2 teaspoons dried minced onion
    1 1/2 teaspoons dried minced garlic
    1 teaspoon sugar
    1 teaspoon ground cumin
    1 teaspoon dried parsley
    1/2 teaspoon Salt, Morton Lite Mixture
    1/2 teaspoon dried basil
    1/8 teaspoon black pepper


    CHILI
    1 tablespoon olive oil
    1 pound Extra Lean Ground Beef 96/4
    1 1/2 large onions, chopped
    1 large green pepper, chopped
    1 jalapeno pepper, minced
    3 1/2 cups tomato sauce
    1 3/4 cups mild chili beans ( I used 1 can of Brooks brand)
    1 3/4 cups hot chili beans ( I used 1 can of Brooks brand)
    3 1/5 cups dark red kidney beans, no salt added (I used 2 cans of Kuner's brand)
    3 cups diced tomatoes, No Salt Added (I used home canned)
    1/4 teaspoon cocoa powder

Directions

1. IN a small bowl combine all the ingredients for the seasoning mix. Stir to combine. Set aside.

2. IN a large pot or dutch oven over medium high heat add the olive oil and ground meat. After a minute or two add the onions, green pepper and jalapeno. Stir, breaking up the meat as it cooks.

3. Stir in the seasoning mix, then add the rest of the ingredients. Mix well.

4. Reduce heat to low, cover and continue cooking 4 hours, stirring every half-hour or so.
