Lazarus Broccoli Mushroom Chowder

Introduction

Number of Servings: 8

Ingredients

    1 pound fresh broccoli
    8 ounces fresh mushrooms
    8 ounces butter
    1 cup flour, sifted
    1 quart chicken stock*
    2 cans evaporated milk (substitutes for 1 quart Half and Half in original recipe)
    1 teaspoon salt
    1/4 teaspoon white pepper
    1/4 teaspoon tarragon leaves

Directions

Clean and cut broccoli into 1/2 inch pieces. Steam in 1/2 cup of water until tender. Do not drain. Set aside.

Wash and slice mushrooms.

Melt butter in sauce pan over medium heat. Add flour to make a roux. Cook for 2 to 4 minutes. Add chicken stock, stirring with a whisk. Bring to a boil. Turn heat to low. Add broccoli, mushroom, Half and Half, spices. Heat, but do not boil.
