Mushroom, Pepper & Gouda Tortilla

Introduction

Ingredients

    8 Pepito Corn Tortillas
    1 orange bell pepper sliced
    handful of fresh cilantro
    2 ozs. Gouda Cheese
    2-3 Portabella Mushrooms, sliced
    1/2 cup sliced onion
    1 Tbsp. Olive Oil
    1 Tsp. Garlic Salt

Directions

Heat up 1 Tbsp of olive oil, add onions and pepper and saute for a few minutes over medium to medium low heat. Add mushrooms and garlic salt and saute until all veggies are tender crisp. Turn the heat to low, add cilantro and grated gouda cheese (we use a strong flavored, organic gouda). While doing this heat tortillas in a seperate pan or in the microwave.
