Chinese Chicken SaladSubmitted by: LADYKAN
1 head Napa Cabbage julienned
3 carrots peeled and cut into matchsticks
1 head of radicchio chopped
3 cups of salad greens chopped
1.5 lbs boneless skinless chicken cooked & shredded
1.5 cups crisp Chinese noodles
4 Tbl toasted sesame seeds &/or slivered almonds or sunflower seeds
1/3 cup Tamari Sauce
1/2 cup Rice Wine Vinegar
2 Tbl honey
3/4 cup peanut oil
1/3 cup Chinese mustard
2 Tbl sesame paste
2 Tbl chopped pickled ginger
1 Tbl chili oil
Salt and pepper to taste
Use a blender to combine Tamari, rice wine vinegar, Chinese mustard, honey, sesame paste, chopped ginger, salt, pepper and chili oil. Blend, then slowly add peanut oil in a stream with blender going.
In a big bowl, mix all salad ingredients, add salad dressing to taste alittle at a time. Serve and garnish with toasted sesame seeds and nuts.
