Triscuit White Chicken Pizzas

Introduction

Makes a filling snack, fun appetizer, or great meal paired with a salad! Makes a filling snack, fun appetizer, or great meal paired with a salad!

Ingredients

    4 Reduced Fat Triscuits
    1 Chicken Tenderloin
    2 teaspoons Ragu Light Parmesan Alfredo Sauce
    4 teaspoons Three Cheese Pizza Blend (or 2% mozzarella)
    1/4-1/2 garlic clove, finely chopped
    1/2 teaspoon parsley
    Olive Oil cooking spray

Directions

Spread Triscuits out on plate or cookie sheet. Spread sauce across Triscuits, and sprinkle with garlic. Lightly spray chicken breast with olive oil cooking spray and grill (I use my George Foreman). Cut chicken into strips and add a strip to each Triscuit. Top with cheese and parsley. Either microwave for ~15 seconds or place under broiler briefly just until cheese is melted and voila!
When serving as a party appetizer I would sprinkle a little extra mixture of Italian seasonings on top for color.
