Tal's On-the-Fly Pasta Sauce

My 15-year-old son wanted to make a fresh, healthy lunch for family and company one Sunday. Unfortunately, I, um... came home with a hangover Saturday night, and couldn't get my rear in gear Sunday morning to do some proper grocery shopping.Tal (my son) had just bought some lovely garlic-parsley pasta at a farmer's market the day before; this is the recipe we came up with to create a lovely, if slightly unusual, pasta sauce with the ingredients we had on hand. We had a lot of people to feed; you can cut the recipe in half, or even go one-forth, for a more reasonable family meal batch. Ingredients

3 - medium, fresh tomatoes (we went organic)
2 - medium carrots (again, the ones we had were organic)
12 oz. (two 6-oz cans) - tomato paste (we used Muir Glen organic)
1.5 cups - water (or less for thicker texture; more for thinner)
1 can - Campbell's "Healthy Request" Tomato Soup (or regular, but there's less sodium in the "Healthy Request" line)
2 tsp - Mrs. Dash's seasoning blend
2 Tbs - minced garlic
1 tsp - crushed red pepper
Directions
1) Peel, then grate the carrots.
2) Dice or finely chop the tomatoes.
3) In a large (or appropriately-sized, for reduced batch) saucepan, combine water, tomato soup, and tomato paste. Bring to a low, slow boil.
4) Slowly add in remaining ingredients.
5) Reduce heat; cover pot and simmer for 20 - 40 minutes.
6) Serve and enjoy!
Makes about 16 1/2-cup servings.
