Quinoa Salad

Introduction

This is an adaptation of a recipe I found on Recipezaar called Mediterranean Quinoa Salad. This is an adaptation of a recipe I found on Recipezaar called Mediterranean Quinoa Salad.
Number of Servings: 6

Ingredients

    1 cup quinoa
    2 cups water
    4 T orange juice
    3 T lemon juice
    1 T olive oil
    2 T balsamic vinegar
    1 tsp brown sugar
    1/2 tsp garlic powder
    salt, to taste
    fresh ground black pepper, to taste
    1/2 onion, chopped (about 3 T)
    1/2 zucchini, chopped
    1/2 cup chopped carrots

Directions

serves about 6 (3/4 cup servings)

Rinse quinoa in a strainer under running water and drain. Pour into a dry skillet and cook over medium heat to toast (about 12-15 minutes).
Bring water to a boil. Add quinoa and let simmer for about 12 minutes. Drain and set aside to cool.
Meanwhile, prepare vegetables and marinade.
For marinade, combine the juices, oil, vinegar, sugar, garlic powder, salt and pepper.
Once quinoa is cooled, add vegetables and marinade and cool in refrigerator for 2 hours, if possible.
