First Place Impossible Ham & Broccoli Pie

Ingredients

    1.5 cup frozen broccoli, thawed
    1/2 cup low-fat cottage cheese
    3 tablespoons Parmesan cheese
    8 ounces fully cooked ham, lean
    1 tablespoon chopped dried onion
    1/4 teaspoon pepper
    4 ounces low-fat cheddar cheese, grated
    1 cup low fat milk
    2 ounces Bisquick
    1/2 cup egg beaters (or use 2 eggs)

Directions

Chop ham, add onion and pepper; set aside in bowl. Mix Parmesan cheese and cottage cheese and pour into 13x9 pan. Form a crust by spreading the cheese mixture with a fork until it covers the entire bottom of the pan. Add broccoli and ham/onion/pepper mixture. Top with half of the cheddar cheese. Beat milk, Bisquick and egg beaters until mixed. Pour over the top of ham. Add remaining cheese. Bake at 350 degrees for 35-40 minutes or until a knife inserted in the center comes out clean.
