Salmon and Spinach no-pastry quiche

Introduction

I was inspired by a crustless spinach quiche which made me look at what I had in the fridge... here we go I guess! I was inspired by a crustless spinach quiche which made me look at what I had in the fridge... here we go I guess!
Number of Servings: 4

Ingredients

    Egg, fresh, 2 large (remove)
    Egg substitute, liquid (Egg Beaters), .5 cup (remove)
    Spinach, fresh, .6 package (10 oz) (remove)
    Milk, 1%, 1.5 cup (remove)
    Pink Salmon (fish), 6 oz (remove)
    light mozzarella, 50 gram(s) (remove)
    Dill weed, dried, 1 tbsp (remove)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    *Pam Cooking Spray - Buttery Flavor .5 second spray, 4 serving (remove)
    *Organic All-Purpose White Flour, 0.5 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    *Peppers, sweet, red, fresh, .5 cup, chopped (remove)

Directions

Mix the vegetables finely chopped with some pam in a non stick pan and cook til soft.

Wilt the spinach leaves on top.

Set aside to chill.

Mix the remaining ingredients - eggs flour milk and egg beaters together with 1tsp baking powder.

Combine the chilled vegetable mix with the egg milk mixture.

In a 10 inch baking pan, sprayed with pam and dusted with flour, pour the mixture.

Then cover the surface with small pieces of the salmon cut up, and cover with the shredded cheese.

Cook for about 25 minutes til solid (might require another 5 mins) at 400 F.
