4 cups water 2 cups long grain brown rice 3.25 cups canned mexican style stewed tomatoes
Bring 4 cups water to boil. Mix in 2 cups long grain brown rice. Reduce heat to medium. Cover and let simmer for 20 minutes stirring occasionally. Once rice has absorbed most of the water, mix in the can of stewed tomatoes. Allow rice to continue to simmer in mixture an additional 10 minutes. Makes approx 5-1 cup servings.
