Chicken, Rice & Broccoli Casserole

Ingredients

    3 boneless, skinless chicken breast, cooked and cut up
    2 cups brown rice, cooked
    3 cups fresh broccoli, steamed
    1/2 cup celery, cooked
    1 can cream of mushroom soup (98% fat free)
    1 cup Colby-Jack cheese, shredded
    1 cup sliced fresh mushrooms

Directions

Combine all ingredients including 3/4 cup shredded cheese. Salt and pepper to taste. Top with remaining 1/4 cup cheese. Bake in microwave for 10 minutes or in oven 350 degrees, 30 minutes or until bubbly.
Makes 6 servings (approx 1 1/2 cups each)

  • Great recipe. I left out the mushrooms and cooked it in cream of chicken soup 98% fat free and it was just as wonderful and tender. The chicken was cooked in chicken broth in the crockpot so it was very tender. - 8/10/09
