Ingredients

BASE
1 cup spelt flour
1/2 cup brown rice flour
1/2 cup oat bran
1/2 cup sucanat
1/4 tsp stevia powdered extract
2 tsp baking powder
2/3 cup skim milk
1/2 cup plain non fat yogurt
1 egg PLUS 2 egg whites
1 tsp vanilla
4 cup fresh or partially thawed blueberries
TOPPING
1 egg PLUS 4 egg whites
2 cup part skim ricotta
1/3 cup sucanat
1/2 tsp stevia powdered extract
1/2 tsp vanilla
Directions
Combine BASE ingredients. Beat well. Pour into large baking pan. 9x11 or 11x13 inch. Sprinkle blueberries on the batter. Combine remaining ingredients. Spread evenly on top. Bake at 350 for 55-60 minutes.
