Corn Chowder w/ Bacon

Introduction

I modified this from a Rachael Ray recipe. I modified this from a Rachael Ray recipe.
Number of Servings: 8

Ingredients

    2 tbsp. olive oil
    1 pkg. turkey bacon, chopped
    3 medium white potatoes, diced
    1 c. onion, chopped
    1/2 c. celery, chopped
    1 small red bell pepper, chopped
    3 tbsp. flour
    2 bay leaves
    1 tbsp. Old Bay seasoning
    salt and pepper
    1 pkg. (10 oz.) frozen yellow corn, thawed and drained
    1 can (15 oz.) chicken or vegetable broth
    1 quart 1 % milk
    1/4 c. chopped scallions

Directions

Heat a deep pot over medium to medium high heat. Add the oil and bacon. Cook for a couple of minutes and add the potatoes. Cover and cook 5 minutes, stirring frequently.

Add onion, celery, red bell pepper, and bay leaves. Season with Old Bay and salt and pepper. Cover and reduce heat a bit, cook a few minutes more, stirring occasionally.

Uncover and whisk in flour. Cook a minute more. Add corn, chicken broth, and milk. Bring soup to a boil, reduce heat, and simmer, 7-10 minutes, to thicken. Adjust seasonings and serve bowls of chowder with a sprinkle of chopped scallions. Makes 8 servings.

  • Be careful - nutritional info might not be right on this. Ingredient list says "one package" of bacon, wheras if you click on the breakdown it says ONE SLICE...sounds like a yummy recipe though! - 8/25/10

  • I love making this. Though I do use center cut bacon instead of turkey bacon. Still good though. It does lower the calorie count by some. I don't have the paper in front me but as soon as I find it I'll put down what the count is. - 7/1/10
