Banana Zucchini Bread

Introduction

I make these & bake in the mini aluminum loaf pans to take on our camping & sailing trips.
Great healthier yet child (& husband, lol!) approved yumminess!
Nutritionals include chocolate chips & raisins.

Number of Servings: 42

Ingredients

    1 1/2 cup Flour, white
    1 1/2 cup Flour, whole grain
    1 1/2 cup Oatmeal, Quick Oats
    2 1/4 tsp Baking Powder
    2.25 tsp tsp Cinnamon, ground
    3/8 tsp Nutmeg, fresh ground
    1 tsp Salt
    1 1/2 cup Egg substitute, liquid
    1 1/2 cups Granulated Sugar, organic
    3/8 cup Olive Oil, light (in flavor)
    3/4 cup Applesauce, Unsweetened
    3 over-ripe med Banana
    2 tsp Vanilla Extract
    3 cup grated Zucchini, fine
    1 cup, Raisins organic packed (or nuts of choice)
    1 cup Mini Chocolate Chip Morsels (optional)

    smaller version (easier to measure)
    1 cup white flour
    1 cup wheat flour
    1 cup rolled oats
    1 1/2 tsp baking powder
    1 1/2 tsp baking soda
    1 1/2 tsp cinnamon
    1/4 tsp fresh ground nutmeg
    1/4 tsp ground allspice
    1/2 tsp salt
    1 cup eggbeaters or 4 eggs (nutritionals use eggbeaters)
    1 cup granulated sugar, organic
    1/4 cup olive oil
    1/2 cup unsweetened applesauce
    2 medium over-rip bananas
    1 tsp vanilla
    2 cups shredded zucchini
    1/2 cup raisins, organic, packed
    1/2 cup mini chocolate chips

    this makes 2 large loafs instead of 3 as in above measurements

Directions

Preheat oven to 350 degrees
Wisk together flours, oats, baking powder, baking soda, cinnamon, allspice, nutmeg & salt
In seperate bowl add eggs, sugar, oil, applesauce, vanilla & mashed bananas.
Combine wet & dry ingredients.
Fold in zucchini, raisins & mini choc chips.
Fill mini loaf pans 3/4 of batter each. (or 3 large loaf pans)
Place on cookie sheet & bake 40-45min or until toothpick comes out clean.
