Introduction

Slow Cooker Tomato Beef Stew Slow Cooker Tomato Beef Stew
Number of Servings: 6

Ingredients

    1 Kg Beef (Caserole Steak)
    2 Lg Onions, Sliced
    2 Tbsp Oil
    2 cloves Garlic, fresh, chopped finely
    2 tsp Ginger, fresh, grated
    2 tsp Thyme
    1 tsp Basil
    1 tsp Oregano
    1 tsp Chilli Flakes or Powder
    1/2 tsp Cayenne powder
    1 Tbsp Soy Sauce
    1 Tspn Balsamic Vinegar
    1 Cup White Wine
    2 Cans of Tomatoes (Whole peeled or Chopped)
    1 Can of Tomatoe Pasta Sauce

Directions

Heat 1 Tbsp Oil in a fry pan and add Garlic and Ginger, saute for 1-2 mins until fragrant. Add Onions and saute until clear, add all spices and continue frying until lightly browned and soft.
Use the remiaing Oil to grease the slow cooker with and turn it on to High.
Chop Beef, Carrots, Kumara and Potato into cubes and put into slow cooker with the cooked onions.
Add wine, Soy Sauce, Balsamic Vinegar, Pasta Sauce and canned Tomatoes, Stir and place lid on.
Cook on High for approx 1/2 hour then reduce to Low and leave for 8-9 hours.
Thicken with Arrowroot if required and serve immediately with fresh steamed vegetables.
