Introduction

By using butter instead of shortening, and whole wheat flour, these traditional snickerdoodles become thin and crispy, with lots of texture. By using butter instead of shortening, and whole wheat flour, these traditional snickerdoodles become thin and crispy, with lots of texture.
Number of Servings: 20

Ingredients

    -----Cookie Dough-----
    1/4 cup Butter, salted
    3/4 cup Sugar
    1 large Egg
    1/4 tsp Vanilla Extract
    1 1/8 cup Whole Wheat Flour
    1 tsp Cream of tartar
    1/2 tsp Baking Soda
    -------Coating-------
    1/2 tsp Cinnamon
    2 tsp Sugar

Directions

1-Cream together first 4 ingredients, add dry ingredients & mix well. Works best if butter is room temperature.
2-Roll dough into 1" balls (dough will be a little sticky because the butter will melt).
3-Roll the balls in the cinnamon & sugar mixture, place on cookie sheet. Make sure there is plenty of room between cookies because they will spread quite a bit.
4-Bake in preheated 400 degree oven for 10 minutes.
Makes approximately 20 cookies.
